The smell of homemade gyros, kabobs, and cauliflower wraps fill the restaurant as customers enter the building. Sounds of chatter and laughter fill the room as the community gathers to taste a part of the world beyond Emmaus, Pennsylvania. From Greek to Turkish foods, True Blue Mediterranean Cafe in Emmaus incorporates all the different flavors from the Mediterranean Basin. The owner, Zaid Hariry, opened the restaurant in 2009 with the hopes
of creating a space that attracts both students and adults.
“I wanted to accommodate both the younger generation if they want to come in for frozen blended drinks,” Hariry said, “and the older generation that want to come in for big entrees like that are lamb and chicken related.”
True Blue is a local staple where people constantly return to enjoy some of their favorite Mediterranean dishes. Their cauliflower dishes, which include the
Cauliflower Basmati and Cauliflower Wrap, are among their most popular dishes. Cauliflower wraps serve as a great choice for anyone, especially those who have dietary restrictions.
“Anybody who has cauliflower, even if most of the time they don’t like cauliflower, they’re like, oh my, we don’t even like cauliflower,” Hariry said, “but this cauliflower is amazing.”
The warm dish has the crunch of cauliflower balanced with a delicious creamy sauce, making it geniusly delicious.
True Blue strives to make all of their customers happy with their experience. The decor inside takes aspects from countries in the Mediterranean Basin.
“People who come here, if they’re locals, end up coming back because they like the food and the service we provide,” Hariry said. “I try to make it so that it accommodates all ages, so that everybody’s happy.”
